La Presle has been heading the kitchen at the fast-paced Santa Monica restaurant for five months now. His love for cooking and passion for seasonally sourced seafood is what fuels him every day.
“Getting to work with an amazing variety of pristine seafood on a daily basis is my favorite part,” said La Presle. His ultimate dish? The Wild Brittany Dover Sole. “It’s a classic — straightforward and delicious.”
As Executive Chef, La Presle manages the back of the house crew at the restaurant. His approach to good leadership is all about “integrity, along with a vision and a plan to get there.”
On his free time, La Presle loves outdoor sports, including snowboarding, surfing and diving. He also enjoys spearfishing with his colleague and fellow Water Grill Executive Chef Paolo. “It’s an awesome way to immerse myself in nature and take home something delicious as well, such as kelp bass, sheepshead fish and spiny lobsters,” said La Presle.
